Today We tried out our Sun Oven by making Sunday dinner in it. We made a pot roast with potatoes, onions, and carrots. Then we baked cookies for dessert. So I guess I’ll tell you the differences we found. First off the sun oven was not quite as hot as I usually bake the roast in the oven. I only got up to 325 degrees so it took longer to bake that in the oven. I usually bake it for 3 1/2 hrs while we are at church. This took 5 hrs to cook. The meat was very tender and the vegetables were great. My recipe is simple I peel and cut up the carrots, potatoes and onions. I place these in a roasting pot. The sun oven came with two that stack and I put the vegetables in one and the roast with some of the onions in the other since they are rather small. I added a little water to each pot, set it in the sun oven and let it cook. The sun oven does need to be adjusted to follow the sun about ever 30 -60 min. So I have my Son who has a different Church time watch it and move it with the sun. When we returned home from church the roast was cooked through but not quite as tender as I like it so we left it in for a couple of more hours. These we quite easy. The sun oven came with 3 racks like the one pictured above. I placed parchment paper on the racks and then dropped the cookie dough on it. I filled all 3 racks. and placed them in the sun oven. The rack on the top cooked faster than the other racks so I removed them one at a time, the first one after about 15 min and then left each additional rack in for 3-5 min more.

My Cookie recipe
- 1 cup Butter
- 1 1/2 cup Coconut Palm Sugar
- 1 tsp Real Vanilla
- 2 large Eggs
- 2 1/2 cups Flour (I use unbromated white flour or soft white wheat flour)
- 1/3 c raw cacao
- 1 tsp baking soda
- 1 tsp sea salt
- 1 c chopped pecans
- 1 c unsweetened shredded coconut
- Guittard semisweet chocolate chips
- Melt butter, add sugar. Mix. Add eggs and vanilla, Mix. Add flour, cacao, salt and soda. Mix. add chocolate chips, coconut and pecans and once again mix all together. Place on baking sheet and bake at 350 degrees for 10 min.
